Director excited about new career

Olivia Scardina is settling in to her position as the new Sunman-Dearborn Community School Corp. food and nutrition services director.

“I interned at Sunman-Dearborn schools with the previous director, Mandy Copenhaver, in January of last year. I really enjoyed my time with her, and I got to know many of the wonderful people in the school corporation. Everyone was so welcoming, and it really showed me the sense of pride and dedication that these people possessed for their schools. I loved working with the students and teaching them the importance of healthy eating and showing them the importance through our nutritious school breakfast and lunch meals,” the Cincinnati resident reveals.

Some of her responsibilities include establishing and overseeing program processes and procedures for each school to ensure accountability, food safety, adequate nutrition and customer service; planning and analyzing menus based on financial parameters, state and federal regulations and nutritional guidelines; assisting with incorporating nutrition education into classroom and cafeteria activities; working with principals regarding student/staff needs and serving schedules; determining staffing levels, providing training opportunities, supervising food service staff through regular visits and evaluating managers; administering the United States Department of Agriculture Commodity Program and free and reduced lunch program; investigating and resolving food quality and service complaints; and making sure the school nutrition program is in compliance with all regulations.

The young lady studied dietetics at the University of Cincinnati and is a registered and licensed dietitian.

On the job: I am looking forward to meeting new people and continuing to improve the quality and nutritional value of the school meals, while serving foods that the students enjoy. I am also looking forward to all the new learning experiences that I will encounter .... I am extremely excited as I begin this new career, and I will do my absolute best to ensure the highest quality, nutritious and delicious meals that I can. I cannot wait to see what this new journey will bring.
